LACTOSE

Lactose is a disaccharide , that is, a complex sugar composed of glucose and galactose, two simple sugars. Lactose constitutes 5% of mammalian milk, this means that a liter of cow's milk contains on average about 50 grams of lactose. Lactose is used in the food industry in the form of powdered milk and is added to various foods such as dairy products that we consume daily on our table, such as milk, mozzarella, butter and yogurt. Lactose gives foods a particular taste , with sweet notes, which is why it is also used in many pre-cooked foods, in bread, in meats, in soups.
To be defined as “lactose-free”, a product must contain a maximum of 0.1% lactose (0.1g/100g) . A product is lactose-free when the raw materials used are lactose-free, i.e. delactosed.
Lactose is the sugar in milk, some people do not have the enzyme to digest it properly , making them lactose intolerant.
An allergy is a reaction of the immune system that is triggered by an allergen perceived as foreign to the body and a source of harm. Foodness indicates its pods dedicated to those who suffer from allergies with the words "without milk and derivatives" or "ok vegans". These products, in fact, do not contain milk or its derivatives or even raw materials of animal origin. An example of an "ok vegan" product is Ginseng with coconut sugar. Intolerance, on the other hand, does not trigger any immune reaction . The body rebels against a certain food because it cannot digest it properly. For those who are intolerant to milk, Foodness has indicated "lactose-free" products, which contain raw materials, including milk, from which the lactose has been removed.

THE SUGARS

Sugars are macronutrients that are the main sources of energy for the body. Also called glucides, they belong to the carbohydrate family and are composed of carbon , hydrogen and oxygen . Sugars are divided into simple sugars and complex sugars . The former provide immediate energy to the body, thanks to their basic chemical structure. They include monosaccharides, disaccharides and oligosaccharides. They have a sweet taste and are soluble in water. The latter, including polysaccharides, have more complex structures and therefore take longer to digest, and constitute the body's energy reserves. They are tasteless and insoluble in water. Sugars are found naturally in fruit and vegetables . Industrial sugars are used to sweeten foods and are divided into sugars similar to natural sugars, syrups and crystallized sugars. Refined simple sugars are widely used in the confectionery industry as sweeteners, but sugars also play an important role in defining the volume and consistency of foods. They add volume to biscuits and cakes, and help retain moisture in foods, an important element for their preservation . The high sugar content limits bacterial growth, allowing food to be preserved for longer. However, the abuse of sugar in the food industry has led to a significant increase in diabetes and obesity in the world population. For this reason, the World Health Organization encourages attention to sugar consumption. The daily ration of sugars recommended by the WHO for an adult is 4-5 teaspoons , equal to 5% of the total daily energy intake.
Products labeled simply as “sugar-free” do not contain sucrose, but may contain one of the other sugars such as dextrose, glucose syrup, fructose.
Foodness® products have no added sugar, that is, they do not contain sucrose, dextrose, glucose syrup, fructose . Foodness® has chosen to use maltitol, a polyalcohol derived from corn starch, which is therefore not a sugar. It has 50% fewer calories than sugar and has a low glycemic index. This avoids blood sugar spikes that create addiction.
It means that there are no other sugars inside the product than those contained in the raw materials in nature . For example, milk contains sugars in nature, as does cocoa.

THE ADDITIVES

Food additives are substances added to food products to perform certain technological functions , such as colouring, sweetening, preserving or improving their appearance, flavour, colour and aroma. They are defined by law at European level as "any substance not normally consumed as a food on its own and not used as a typical ingredient of food, whether or not it has nutritional value, which, when intentionally added to food products for a technological purpose during the production, processing, preparation, treatment, packaging, transport or storage of food, can reasonably be expected to become, itself or its derivatives, a component of such food, directly or indirectly".
The wording “without additives” indicates that the product does not contain substances defined as additives . Ginseng Amaro is the product in the Caffè Speciali range that can be defined as “without additives”. The other products in the range cannot be defined as such because they contain maltitol, a polyalcohol obtained from malt syrup. Maltitol is legally defined as an additive.
